Love the Arm Saddle course but wanted to ask a specific question. What if opponent grabs your foot preventing you from throwing that leg over the arm saddle? How do you free your leg or counter this defense?

FYI Lachlan has a course on his Submeta platform has an entirely different solution. It also involves using the other leg to directly break the grip. It's not easy to describe via text though, and I've never done it myself (actually, Lachlan's legwork for his entire Choi bar is totally different from mine). But just wanted to let you know there are other options.
Personally, this isn't something that's ever given me that many problems, I've always intuitively done something something similar what Maira/Salles show. Also, I often step my controlled leg on the mat far "north" of their head, which forces them to reach in an overhead motion if they want to keep that grip. This not only weaken their grip strength, it also gives me a good angle to free my ankle by retracting it, ie, bringing my knee to my chest. I'm not sure if this text makes sense, but I realized this is something I do after trying to answer your question.
However, I should note that I train almost exclusively in no-gi. I haven't had much experience troubleshooting my Choi bar when gi grips are involved. Just based on my intuition, I think Lachlan's solution of using his free leg to directly break the grip is going to work better than the Maira/Salles technique if gi grips are involved. As I noted, Lachlan's leg work is a lot different from what I do, and depending on your leg work, it might require you to learn a substantially different variation. (Personally, I'm going to give a shot, as I'm always looking to try out new variations.)
