I just started mine in November.
I post rolls with and without narration, technique and reactions to matches.
I also started The Uncle Wristlock Podcast the day I got my black belt and post episodes there.

Nice. I liked the Mica Jay-rod breakdown.
I started a youtube channel recently as well. Right now I'm just doing event results and breakdowns, but I might move it in a slightly different direction in the future.

I keep thinking about it, but so far the vast majority of my video content is still on Instagram. I've got a few on YouTube, but only a handful (compared to almost 2000 vids on my @artemisbjj insta).
I've also been considering some kind of cheap (like £5 or £10) online vid courses. One of my students is a pro editor, mainly works in TV (for the BBC etc). Work in that industry has really dried up, at least in the UK, so this could be a way to get her a little bit of income.
Super early stages at the mo, though.
My YouTube channel has grown the most from Shorts on YouTube.
Your channel would blow up just from the IG videos you'll already done.
