Jason's reply on the lesson post of getting and maintaining high mount so that you're not on their hips is one fantastic way but I've been experimenting with Craig Jone's folk wrestling-inspired leg pinning philosophy and it works incredibly - in terms of the mount and stopping this kipping motion it's moving your weight down below their hips so that you're stapling/riding their legs. This works on the same principle as Jason's advice (ensuring they don't have their hips under you) but in the opposite direction. I find this super helpful when I can't manage to achieve high mount for whatever reason with the added bonus that it's super uncomfortable for them, very easy to maintain by just surfing their legs, and if coupled with oppositional rotation of their shoulders often leads them to flattening out on their stomach.

In Danaher's mount dvd when discussing the 10 different types of mounts he teaches, he shows that a good butterfly mount can negate and even counter the kipping escape. In that demo he showed that when he had his butterfly hooks in and they tried to kip, he was able to enter into a heel hook pretty easily. I've never seen that hit live but I doubt Danaher is just showing moves to show them.
