Just seeing if there are courses that cover Kuzushi principles. I really want know some techniques to force opponent's to move/react certain ways to set up sweeps and submissions, especially in the GI.
I think in general each technique has to start with Kuzushi in order for it to work, hence it's the number one principle in Judo, so it will be the very first instruction in pretty any sweep/submission video on an individual basis but as a general principle you might find some milage out of the following courses:
Sweep Prevention Series - this one more on prevention but you can reverse engineer for the attacking perspective
Off Balance Closed Guard - an entire course on a position based on off balancing/having your opponent off balanced
Balance and Base Acclimation - Jason's fundamentals on balance and base
It's only really mentioned by name in takedowns so you'll find a lot of it in Vlad Koulikov's content on here for instance but every sweep will have an initial element of Kuzushi even when it's not explicitly stated.
I think one important skill is to read your opponent. Often we unbalance our selfs and with a little help and timing you can go a long way.

I definitely need to focus on more kuzushi as well from every position, such an important principle
Coming from an Aikido background now in BJJ I find that off balancing your opponent is so very critical. If you don't you are essentially fighting yourself.
